Spring Produce

In spring in Pueblo, early cool-season veggies, and, fresh herbs emerging, while the famous Pueblo chiles are  growing, but harvested later. Look for early greens and root vegetables at the Pueblo Farmers Market.
 
Common Spring Produce in Pueblo:
  • Leafy Greens: Lettuces, spinach, kale, mustard greens, Swiss chard.
  • Root Vegetables: Carrots, beets, radishes, turnips, onions, potatoes.
  • Broccoli, cauliflower, asparagus, green onions (scallions).
  • Perennial Herbs: garlic chives, oregano, tarragon, garlic
  • Annual Herbs: cilantro, parsley, celery
  • Berries (Late Spring): While most local fruit is summer/fall.

Summer Produce

Thanks to warm days, cool nights, Southern Colorado grows an abundance of juicy tomatoes, sweet corn, cucumbers, zucchini, and peppers, alongside tender leafy greens and fragrant herbs, stone fruits like peaches, cherries, and apricots shine early in the season, and berries from June through August.

Our Typical Summer Produce:

  • Heirloom and slicing tomatoes, cherry tomatoes, eggplant, and sweet peppers

  • Sweet corn, green beans, and shelling peas

  • Cucumbers

  • Leafy Greens

  • Beets, carrots, scallions, garlic, and onions

  • Some fruit: strawberries,  melons,  watermelon, Italian plums

  • Herbs

Fall Produce

In the fall, Pueblo offers iconic Pueblo green chiles, along with winter squash, and root vegetables like carrots, parsnips, and turnips, plus late-season crops such as kale, collards, and broccoli, with apples, pears, and grapes rounding out the fruit selection. Available at the Pueblo Farmers Market throughout September and October.

  • Iconic Peppers: And, the famous Pueblo Green Chile
  • Squash & Gourds: Pumpkins (for decorating & pies)
  • Leafy Greens: Kale, collards, spinach, and mustard greens.
  • Root Vegetables: Carrots, parsnips, beets, turnips, and celery root.
  • Other Vegetables: Broccoli, cabbage, cauliflower, and late-season tomatoes.
  • Stone Fruits: Apples, pears

Our farm focuses on regenerative agriculture and providing diverse crops that might not be as commonly found in typical supermarkets, with a goal of challenging food inequity in the Pueblo community.
